Jean-Anthelme Brillat-Savarin (1755-1826) was a French lawyer and politician, best known for his influential work on gastronomy, "Physiologie du goût" (The Physiology of Taste). Born at the Hôtel Brillat-Savarin, he spent his later years in Paris, where he passed away on rue des Filles-Saint-Thomas. His writings continue to be celebrated for their insights into the art of eating and the philosophy of food.
